Peel the garlic cloves, ensuring they are whole and unblemished.
Place the garlic cloves in a small saucepan.
Cover the garlic with olive oil, ensuring they are fully submerged.
Add herbs and salt to the saucepan for flavor.
Heat the saucepan over low heat until the oil is warm, about 10-15 minutes.
Maintain a low simmer, allowing the garlic to cook gently for 45-60 minutes.
Stir occasionally, ensuring the garlic doesn't brown.
Remove from heat when the garlic is tender and lightly golden.
Let the confit cool to room temperature in the oil.
Transfer the garlic and oil to a clean jar for storage.
Store in the refrigerator for up to two weeks.
