Avocado oil has a high smoke point and is healthier, while canola oil is more budget-friendly.

Peel the garlic cloves, either one by one or by shaking them in a bowl to remove some of the peel.

Choose your method: stovetop or oven roasted.

For stovetop garlic confit, place peeled garlic cloves in a small-medium saucepan and cover with olive oil. Simmer over the lowest heat for 30-45 minutes until tender and light golden brown. In the last 5 minutes, add your favorite spices.

For oven roasted garlic confit, place peeled garlic cloves in an oven-safe dish, cover with olive oil, add your favorite spices, and bake at 110C (230F) for about 1½ hours until tender and light golden brown.

Transfer the confit to a jar and keep in the fridge.
