Cook the garlic gently in the oil, stirring occasionally for about 40 to 45 minutes until the garlic is tender and completely soft.

Turn off the heat and let the oil and garlic cool to room temperature.

Transfer the garlic and oil to a clean jar for storage.

Refrigerate for at least a week, using a clean utensil each time to avoid introducing germs.
