Garlic Confit from the Wood Fired Oven

Avocado oil has a high smoke point and is healthier, while canola oil is more budget-friendly.

Preheat the oven to 250°F (120°C).

Separate the cloves from 2 heads of garlic, leaving the skin on.

Add the garlic cloves to a finex cast iron sauce pot.

Add 20 peppercorns to the pot.

Add 2 sprigs of rosemary and 2 sprigs of thyme to the pot.

Add a generous pinch of salt to the pot.

Pour 1 cup of extra virgin olive oil into the pot, ensuring all ingredients are covered.

Transfer the pot to the oven and close the door.

Cook for around 45 minutes.

Remove the pot from the oven and let it cool down.

Transfer the garlic confit to an airtight container for storage.
