Prepare the stuffing by mixing 2 tablespoons besan, 2 tablespoons Kashmiri red chili powder, 1 tablespoon salt, 1/4 tablespoon garam masala, 1 tablespoon amchur, and 2 tablespoons coriander powder in a bowl.
Take 250 grams of okra, cut off the tops, and make a slit lengthwise without cutting through.
Roast the besan in a pan on low flame for about 1 minute, stirring continuously to prevent sticking, until it is lightly browned.
Transfer the roasted besan to a bowl and mix in the prepared spices.
Stuff the okra with the spice mixture, pressing gently to secure the filling.
Heat 3 tablespoons of oil in a pan until hot, then add 1/2 teaspoon cumin seeds and 1/4 teaspoon turmeric powder.
Add the stuffed okra to the pan, mix well, and cover with a plate with a little water to prevent sticking, cooking on low flame for 4-5 minutes.
Check if the okra is fried properly after 5 minutes.
Add the remaining besan to the pan and cook for an additional 2-3 minutes, stirring continuously to avoid burning.
Optionally, add 2-3 tablespoons of yogurt cream or juice of half a lemon for flavor.
Finish cooking and serve with paratha or puri.
