Roti, also known as chapatti or phulka, is a staple flatbread in Indian cuisine, traditionally made from whole wheat flour. All-purpose flour is more readily available and cheaper.
Add flour to a mixing bowl.
Add salt to the flour.
Add butter or margarine to the flour mixture.
Pour in vegetable oil and rub it into the flour until it resembles breadcrumbs.
Pour in a little boiling water and mix with a spoon.
Continue adding boiling water and mixing until you have a clumpy dough.
Remove any excess dough from the spoon and bring the dough together with your hands, being careful as it will be hot.
Knead the dough for about 6 to 8 minutes in the bowl to keep it warm, taking breaks if necessary.
Once kneaded, the dough should be smooth and pliable.
Separate the dough into 12 to 13 equal parts.
Lightly flour a surface and work with one portion of dough at a time.
Tuck, roll, and flatten the dough on the floured surface.
Lightly flour a rolling pin and roll out the dough into a disk.
If the dough sticks, dust more flour on the surface.
If you cannot roll it into a circular shape, use a plate or lid to cut out the shape.
Once all dough portions are rolled out, prepare to toast them.
Line a container with wax or parchment paper.
Place a skillet on medium heat on the stovetop.
Once the skillet is hot, place the dough onto it and use fingers or a spatula to spin the disc around.
Toast for about 30 seconds, then flip it over and toast the other side for another 30 seconds.
Flip again; it should begin to puff up.
If both sides are toasted, remove it from the heat and place it in the lined container.
Continue toasting all disks, covering the container with a dish towel after each one to keep them soft.
