Mix 1/2 cup semolina and 1/2 cup water together and let it soak for a while.

Add 1/2 chopped tomato, 3 tablespoons chopped carrots, 3 tablespoons chopped green beans, 1/4 teaspoon turmeric, 1/2 teaspoon red chili powder, 1/4 teaspoon black pepper, and salt to taste; mix well and sauté for a few seconds.

Turn off the heat and add 1 tablespoon oregano and 1/2 teaspoon Schezwan chutney; let it cool slightly.

Once the semolina has soaked and expanded, mix in the prepared stuffing.

Slice potatoes thinly, wash them, and dry on a tissue.

In the same pan, add 1 tablespoon oil and arrange the potato slices in a single layer.

Fry until one side is golden brown, then flip them over.

Sprinkle some oregano and chili flakes on top of the potatoes.

Spread the semolina mixture evenly over the potatoes in the pan.
