Melt 200g dark chocolate and 150g butter in a heatproof bowl over a pan of simmering water until smooth.

Separate 5 eggs into two bowls: 4 egg whites in one bowl and 1 egg yolk in the other.

Whisk the egg whites until they reach medium soft peaks, then gradually add sugar while whisking until combined.

In the other bowl, whisk the egg yolk until pale and combined with the melted chocolate and butter mixture.
