This gluten-free version allows those with dietary restrictions to indulge in a rich, decadent treat without sacrificing flavor or texture. Today, gluten-free baking has gained popularity worldwide, with many variations emerging to cater to diverse tastes and preferences.

Melt 200g dark chocolate and 150g butter in a heatproof bowl over a pan of simmering water until smooth.
Separate 5 eggs into two bowls: 4 egg whites in one bowl and 1 egg yolk in the other.
Whisk the egg whites until they reach medium soft peaks, then gradually add sugar while whisking until combined.
In the other bowl, whisk the egg yolk until pale and combined with the melted chocolate and butter mixture.
Add a small amount of the whisked egg whites to the chocolate mixture to temper it, then gently fold in the remaining egg whites until just combined.
Grease an 8-inch cake tin with butter and dust with cocoa powder, shaking out the excess.
Pour the batter into the prepared cake tin.
Bake in a fan-assisted oven at 165-170°C for around 25-30 minutes until it rises and sets.
