2 cups fresh fenugreek leaves (methi)
1 cup boiled green peas (matar)
2-3 tbsps fresh cream (malai)
4 tbsps ghee
1 bay leaf
4-5 green cardamoms
4-5 cloves
8-10 black peppercorns
8-10 garlic cloves
1 inch ginger, roughly chopped
2 green chillies, slit
2-3 tbsps melon seeds
10-12 cashew nuts
3 medium onions, sliced
Salt to taste
1 tsp cumin seeds
2-3 tbsps chopped fresh coriander leaves

Heat 2 tbsps ghee in a nonstick pan. Add bay leaf, green cardamoms, cloves, black peppercorns and sauté till fragrant.

Add garlic, ginger, green chillies and sauté for 30 seconds.

Add melon seeds, cashew nuts, onions, salt and mix well. Sauté till onions are translucent.

Add ½ cup water, cover with a lid and cook for 3-4 minutes. Allow to cool and transfer in a grinder jar. Grind to smooth paste.

Heat remaining ghee in a nonstick pan. Add cumin seeds and once they start to change the colour, add fenugreek leaves and mix well. Sauté for 2 minutes.

Add green peas and mix well.

Add prepared gravy and mix well. Cook for 2-3 minutes.

Add fresh cream, coriander and mix well.

Transfer in a serving bowl and serve hot with paranthas.
