4 teaspoon garlic, minced
1/4 cup chicken broth
1/4 cup butter
2 tablespoon lemon juice
16 ounce zucchini, spiralized or sliced into noodles
1 tablespoon olive oil
1/4 cup parsley, chopped to garnish

Heat 2 tablespoons of olive oil in a pan over medium heat.

Add 16 ounces of peeled and deveined shrimp, seasoning with salt and pepper, and cook until pink and opaque.

Remove shrimp from the pan and set aside.

In the same pan, add 1 tablespoon of olive oil and 4 teaspoons of minced garlic, sautéing until fragrant.

Pour in 1/4 cup of chicken broth and 1/4 cup of butter, stirring until melted and combined.

Add 2 tablespoons of lemon juice, then return the shrimp to the pan, tossing to coat in the sauce.

In a separate pan, heat 1 tablespoon of olive oil and sauté 16 ounces of spiralized zucchini until tender.

Serve the shrimp scampi over the zoodles, garnished with 1/4 cup of chopped parsley.
