Make a fresh batch of green seasoning with fresh ginger, red bell peppers, red onion, regular onion, cilantro, parsley, and other ingredients listed on the screen.
Clean the crabs thoroughly, scrubbing to remove dirt; you can use snow crab legs if preferred.
Season the crab with 2-3 tablespoons of green seasoning, 1 tablespoon of curry powder, 1 tablespoon of Old Bay seasoning, and all-purpose seasoning; mix well and set aside.
Dice cherry tomatoes finely.
Make a curry paste by mixing curry powder with a little saffron powder and water until it reaches a thick but runny consistency.
Heat olive oil in a pot over medium-high heat; add 2 tablespoons of green seasoning and the curry paste mixture, stirring well.
Add the diced tomatoes and cook for 2-3 minutes to allow flavors to meld.
Add 1 cup of water to the pot, then add the seasoned crab and 2-3 more cups of water; cover the pot.
In a large bowl, mix flour, salt, and some green seasoning; slowly add lukewarm water and knead until a dough ball forms, kneading for about 5 minutes.
Roll out the dough and cut into circular shapes using a cookie cutter or a circular cap.
Add coconut milk to the pot with the crab mixture and stir well before adding the dumplings.
Gently add the dumplings to the pot and let cook for about 20 minutes until fully cooked and the sauce thickens; taste and adjust seasonings as needed.
Serve the curry crab and dumplings garnished with fresh parsley or cilantro.
