Chop celery and carrot.
Heat extra virgin olive oil in a pan.
Add chopped onion, garlic, celery, and carrot to the pan; sauté until softened, about 6-8 minutes.
Add 250g ground beef to the pan; cook until browned.
Add salt and black pepper to the dish.
Mix vegetable stock in a separate bowl.
Pour vegetable stock into the pan to enhance flavors; ensure there's plenty of liquid for simmering.
Add dried Italian herbs to the pan.
Stir in lentils, tomato paste, and canned tomatoes.
Let the mixture simmer for 45 to 60 minutes, stirring occasionally.
Cook pasta separately until al dente.
Serve the Bolognese sauce over the pasta and top with grated parmesan cheese and fresh parsley.
