Callaloo soup is a beloved dish in Saint Vincent and the Grenadines, showcasing the island's rich agricultural heritage. Traditionally made with local callaloo leaves, this soup reflects the resourcefulness of Caribbean cooks who utilize fresh, seasonal ingredients. It often features crab, adding a touch of luxury to the dish. Today, variations abound, with many incorporating different proteins or vegetables, making it a versatile favorite across the Caribbean and beyond.

Clean the callaloo leaves by removing the outer skin on the stock.
Chop the callaloo leaves into pieces and put them in a blender to puree.
Prep the aromatics: chop onion, garlic, mental peppers, shadow benny, okra, and peppers.
Add about 1.5 tablespoons of oil to a pot and heat it.
Add the chopped aromatics and okra to the pot and sauté for a few minutes to release flavors.
Add the pureed callaloo to the pot and let it come to a boil.
Cook the callaloo for about 15-20 minutes until it turns dark green.
Peel the provision: sweet potatoes, edo's, green plantain, and dumpling.
Add the provision to the pot, followed by the dumpling and cooked pigtails.
Crack the bay leaves to release flavor and add them to the pot along with salt and pepper.
Stir the pot and let the dumplings and provision cook until ready.
