Heat a large pot over medium heat and add oil.
Sauté chopped onion, garlic, and bell pepper until softened, about 5 minutes.
Add thyme and scallions, stirring for another minute.
Pour in vegetable broth and bring to a boil.
Add chopped callaloo leaves and cook until wilted, about 3-4 minutes.
Stir in coconut milk and return to a simmer for 5 minutes.
Add crab meat and lime juice, cooking for an additional 2-3 minutes.
Season with black pepper and hot pepper to taste.
Remove from heat and let cool slightly before blending.
Blend the soup until smooth and creamy, then return to pot.
Reheat gently before serving.
