Turn on the flame to medium heat and place a saucepan on the stove.

Add 1 cup of water to the saucepan.

Stir in the Maggie super top vegetable soup mix.

Add 1 cup of chopped callaloo and stir through.

Cover the saucepan and leave it to come to a boil.

Once boiling, add the quarter teaspoon of shredded ginger, chopped celery, chopped scallion, and about a tablespoon of chopped onion.

Stir the mixture and leave it for 1-2 minutes until all the vegetables are cooked.

Remove the thyme sprig from the mixture and let the vegetables cool completely.

Once cooled, pour the mixture into a blender and puree everything until smooth.

In the saucepan on medium flame, add 2 tablespoons of margarine and let it melt.

Add 1.5 tablespoons of all-purpose flour while whisking it in.

Slowly whisk in the coconut milk, not all at once.

Add a pinch of garlic powder and a pinch of black pepper to the mixture.

Cover the saucepan and let it simmer for 2-3 minutes.

Add the pureed vegetables to the saucepan and let it simmer for another 2 minutes.
