Soak rice and urad dal with fenugreek seeds in water for 4-6 hours.
Drain the soaked ingredients and blend them into a smooth batter, adding water as needed.
Ferment the batter in a warm place for 8-12 hours until it rises and becomes bubbly.
Add salt to the fermented batter and mix gently.
Heat a griddle over medium heat and lightly grease it with oil.
Pour a ladleful of batter onto the griddle, spreading it into a thick circle.
Cook until the edges lift and the bottom is golden brown, about 3-4 minutes.
Flip and cook the other side for an additional 2-3 minutes until cooked through.
Repeat with remaining batter, greasing the griddle as needed.
Serve hot with coconut chutney and sambar.
