Soak chana dal in water for at least 4 hours or overnight.
Drain and rinse the soaked dal before cooking.
Boil the dal in water until tender, about 30-40 minutes.
In a separate pan, heat cooking oil over medium heat until shimmering.
Add cumin seeds and sauté until they begin to crackle.
Stir in finely chopped onions and sauté until golden brown, about 5-7 minutes.
Add minced ginger, garlic, and green chilies; sauté for 2-3 minutes until fragrant.
Incorporate chopped tomatoes and cook until they soften, about 5 minutes.
Add turmeric powder, red chili powder, and coriander powder; mix well and cook for 2 minutes.
Pour the boiled dal into the sautéed mixture and stir to combine.
Adjust the consistency with water if needed; simmer for 10 minutes.
Sprinkle garam masala and mix well; cook for an additional 5 minutes.
Remove from heat and garnish with chopped cilantro and a squeeze of lemon juice.
Serve hot with rice or naan.
