Clean the lotus stem under running water to remove dirt.
Peel the outer skin of the lotus stem and cut off the ends.
Slice the lotus stem into round or elongated pieces, keeping them slightly thick.
Boil water in a pan and add the sliced lotus stem, turmeric, and salt to clean it further.
Boil for 5-10 minutes until slightly cooked and then drain and rinse with cold water.
Chop onion, garlic, green chili, and ginger finely.
Heat mustard oil in a pan and fry the boiled lotus stem pieces for 2-3 minutes until golden.
Remove the fried lotus stem and set aside on a paper towel.
In the same oil, add cumin seeds, chopped ginger, garlic, green chili, and onion; sauté until the onion is translucent.
Add turmeric powder, Kashmiri chili powder, and vegetable masala (optional); mix well.
Add a little water to prevent the spices from burning and cook until the oil separates from the mixture.
Add whisked yogurt to the pan and mix well.
Add the fried lotus stem back into the pan, along with salt to taste and additional water if needed.
Cover and simmer on low heat for 10-15 minutes until thickened and flavors meld together.
Serve hot with rice or roti.
