1

Slice the flank steak into ⅛ of an inch thick pieces.

2

Marinate the beef with ¼ tsp of salt, ⅛ tsp of baking soda, 2 tsp of cornstarch, and ½ tbsp of Chinese cooking wine. Mix thoroughly and set aside for 10 minutes.

3

Prepare the gailan by separating the stems and leaves, cutting the stems at an angle into bite-sized pieces and roughly chopping the leaves.

4

Make the black pepper sauce by mixing 2 tbsp of oyster sauce, 1.5 tsp of soy sauce, ½ tsp of dark soy sauce, and 2 tsp of sugar, along with a generous amount of coarsely ground black pepper and 1 tbsp of water. Set aside.

5

Preheat the wok over high heat until smoking hot, then add a big drizzle of vegetable oil.

6

Toss in the gailan stems and stir for a couple of minutes until cooked through.

7

Add the marinated beef to the wok and quickly stir to separate the slices until the meat changes color, which should take less than a minute.

8

Add diced garlic and gailan leaves, then pour in the black pepper sauce and continue to mix until well combined.
