Toast the semolina in the oven for 8-10 minutes.

Mix 1 egg and 100 g of castor sugar together.

Add 50 g of raisins, 100 ml of sunflower oil, 100 ml of water, and a pinch of salt to the egg and sugar mixture.

Add 2 tablespoons of baking powder and mix everything together.

Slowly add the toasted semolina to the mixture and combine well.

Line a tray with greaseproof paper and pour the mixture into it, flattening the top.

Cut diamond shapes into the mixture with a knife.

Place blanched almonds and sesame seeds on top of the mixture.

Bake in an AGA roasting oven at 180°C for 15 minutes, then cut through the lines again and bake for another 15-20 minutes.

Prepare the honey glaze by boiling 170 ml of cold water and 170 g of castor sugar together, then add 3 tablespoons of honey and orange zest.

Pour the hot glaze over the baked saffra and return to the oven for a few minutes to dry the glaze.

Let cool for 30-45 minutes before cutting into pieces and serving.
