1/2 cup chana dal (yellow split peas)
2 tbsp toor dal (pigeon peas)
1 tbsp urad dal
1/2 cup curd
1/4 cup water
1 cup grated bottle gourd
1/2 cup grated carrot
1/3 cup boiled corn
1/4 cup boiled green peas or frozen
1/4 cup chopped capsicum
1/4 cup finely chopped coriander leaves
1 tsp ginger, green chili paste
a pinch asafoetida
1/4 tsp turmeric powder
salt to taste
1/2 tsp sugar (optional)
1/4 tsp Eno fruit salt blue
1 to 2 tbsp water (if required)
2 tbsp oil
1 tsp sesame seeds
1 tsp mustard seeds
some fresh curry leaves
a pinch asafoetida

Soak the small rice, chana dal, toor dal, and urad dal in water for a few hours.

Drain and blend the soaked rice and dals with curd until smooth.

Transfer the mixture to a bowl and add grated bottle gourd, grated carrot, boiled corn, boiled green peas, chopped capsicum, and chopped coriander leaves.

Add ginger and green chili paste, asafoetida, turmeric powder, and salt to the mixture and mix well.

If needed, add water to achieve the desired batter consistency.

Let the batter rest for a while to ferment slightly.

In a small pan, heat oil and add mustard seeds until they splutter, then add sesame seeds, curry leaves, and asafoetida.

Pour this tempering into the batter and mix gently.

Add Eno fruit salt to the batter and mix lightly.

Grease a non-stick tawa and pour the batter into it, smoothing the top.

Cook on low to medium flame until the handvo is crisp on the outside and soft on the inside.
