1 tablespoon coriander seeds
1 teaspoon salt

Wash the bitter gourd and cut off the ends with a knife.

Peel the outer skin of the bitter gourd using a peeler or knife.

Slice the bitter gourd lengthwise and remove the seeds carefully.

Sprinkle salt inside and outside the bitter gourd to draw out moisture; let it sit covered for about 1 hour.

After an hour, squeeze out the moisture from the bitter gourd.

In a kadhai, heat about 3-4 tablespoons of oil over medium heat.

Add the bitter gourd to the oil and fry, turning occasionally, until softened; cover while frying.

Once fried, set the bitter gourd aside to cool.

In another kadhai, add the garlic and sauté for 2-3 minutes until golden brown.

Add 1 tablespoon mustard seeds, 1 tablespoon cumin seeds, and 1 tablespoon coriander seeds; sauté for 2 minutes until fragrant.

Remove the spices from the kadhai and grind them coarsely.

In the same kadhai, add the chopped onions and sauté for 2-3 minutes until soft.

Add the squeezed bitter gourd to the onions and mix well.

Sprinkle in 1/2 teaspoon salt and mix to combine.

Add the ground spice mixture and 1 tablespoon amchur powder; mix everything well.

Transfer the mixture to a plate and fill the bitter gourd with the prepared stuffing.

In the kadhai, place the stuffed bitter gourd and cover; cook on low flame for 5 minutes.

After 5 minutes, flip the bitter gourd and cook for another 5 minutes on low flame without adding more oil.
