1 yellow onion, finely chopped
a couple of stems of flat-leaf parsley, finely chopped
fresh mint leaves, finely chopped
2-3 fresh garlic cloves, minced
2 tablespoons tomato paste
2 tablespoons olive oil
1/2 cup breadcrumbs
1 teaspoon coriander powder
1 teaspoon cumin powder
1 teaspoon turmeric
1/2 teaspoon baking soda
salt to taste
pepper to taste

Prepare breadcrumbs by breaking day-old bread into chunks and blending in a food processor until fine.

Chop the parsley, mint, garlic, tomato, and onion very finely, either by hand or using a food processor without pureeing.
