3–6 Thai bird’s eye chilies
1 small onion or 2 shallots, sliced (optional)
1–2 tbsp vegetable oil
1 tbsp oyster sauce
1 tbsp light soy sauce
1 tsp dark soy sauce
1 tsp fish sauce
1 tsp sugar
Steamed jasmine rice
Fried egg (kai dao), optional but traditional
