Today, Sholeh Zard is enjoyed not only in Iran but also by Persian communities worldwide, celebrated for its unique flavor and comforting texture.

Wash the rice.
Add around 2 cups of water to the rice and put the lid on.
Let it come to a simmer, stirring occasionally to ensure it has enough water until the rice is cooked.
Check if the rice is cooked by smashing a grain between your fingers.
Add the sugar and stir until dissolved.
Add the chopped almonds, reserving some for decoration, and stir to combine.
Add butter and put the lid back on to let it melt into the mixture.
After about 5 minutes, turn off the heat and add the saffron and rose water, mixing well.
Let the mixture sit in the dish for at least 10 minutes to form a layer on top for easy decoration.
Sprinkle cinnamon on top for aroma, without mixing it in.
Garnish with the reserved pistachios and almonds.
