Today, Sholeh Zard is enjoyed not only in Iran but also by Persian communities worldwide, celebrated for its unique flavor and comforting texture.

Wash 1 cup of rice 2-3 times until the water runs clear.
Soak the rice in 8 cups of water for 3-4 hours, or if short on time, soak in boiling water for about 30 minutes.
After soaking, place the rice in a pot over medium heat and cook for 1.5 to 2 hours until the rice is completely soft and fluffy.
During cooking, add 3 cardamom pods to infuse flavor into the rice.
Once the rice is soft, remove the cardamom pods and ensure the water level is even with the rice.
Add the prepared saffron and stir well, allowing the flavors to meld for 10 minutes.
After 10 minutes, add 2 cups of sugar and stir until no sugar lumps remain.
Let it cook for an additional 20 minutes to fully combine the flavors.
Incorporate 50 grams of butter and 0.5 cup of slivered almonds, stirring continuously to prevent sticking.
Cover the pot with a lid and let it steam on very low heat for 20 minutes.
If the mixture is too thick, add a little boiling water while stirring until the desired consistency is reached.
Transfer to a serving dish and garnish with cinnamon, slivered almonds, and pistachios.
