It has been enjoyed for centuries and is often associated with festive occasions, particularly during the holidays. The texture can range from chewy to hard, depending on the cooking time and temperature. Variations include adding chocolate or nuts, making it a versatile treat for various celebrations.

Prep a 9x9 inch cake pan and line it with 13x13 inch parchment paper, cutting slits down the sides for a better fit.
Scatter 1 cup of toasted almonds at the bottom of the cake pan.
Add 1 cup of coarsely chopped toasted pecans on top of the almonds.
In a pot, combine 1 cup of white granulated sugar, 1 cup of unsalted butter, 1/4 cup of water, and 1/2 teaspoon of kosher salt.
Stir the mixture and cook until it reaches 290 to 300°F (145 to 150°C).
Insert a candy thermometer once the mixture starts boiling, stirring continuously to prevent sticking.
Perform a cold water test to check the consistency of the toffee.
Once it reaches the hard crack stage, remove from heat and stir in vanilla extract.
Pour the toffee mixture over the nuts in the cake pan, spreading it evenly with a spatula.
Let it sit for 2 seconds to set slightly before drizzling 1 cup of semi-sweet chocolate chips on top.
Spread the melted chocolate with a spatula and sprinkle with flaky sea salt and additional nuts if desired.
Allow to cool at room temperature for 6 to 8 hours or refrigerate for about an hour to set.
Once set, use the parchment paper to lift the toffee out of the pan and break it into pieces.
