Introduce the recipe for pepper pot and show the fresh meat bought from the butcher.
Describe the types of meat used: short ribs and steak, emphasizing the fat content for juiciness.
Wash the meat thoroughly and season with salt to taste.
Add fresh garlic and rosemary to the meat.
Sprinkle black pepper and cayenne pepper (optional) onto the meat.
Add the homemade dry seasoning blend to the meat.
Pour a little soy sauce over the meat and mix well.
Let the meat marinate for about 2 hours (or less if short on time).
Heat 1/4 cup of oil in a pan and sauté the marinated meat until it reduces in size.
Monitor the cooking process, noting that water will be released from the meat.
Add spices: 1/4 teaspoon of cardamom powder, 1/4 teaspoon of clove powder, and a cinnamon stick.
Continue to sauté the meat, checking for doneness as the bones become loose.
Add the remaining seasoning and casrip (a type of sauce) to the meat.
Pour in about 1 cup of water to help blend the flavors and cover the meat.
Add 3 cups of boiling water to the pot and cover the meat, allowing it to boil down.
Check the consistency and add a hot pepper for flavor while it continues to boil.
Once the sauce has reduced and the meat is tender, remove from heat and serve.
