1

Welcome to Fly East kitchen; today we're making crab fried rice topped with garlic buttery parsley sauce.

2

Start with cleaning the Dungeness crab by placing it in a pot of boiling water for about 5 minutes to remove any dirt.

3

Prepare an ice bath in another bowl with water and ice cubes; transfer the crab there after boiling to stop the cooking process.

4

Rinse 1 cup of rice under cold water until the water runs clear; this is important for removing excess starch.

5

In a new pot of boiling water, add the rinsed rice along with salt, pepper, and some lime juice; cook according to package instructions.

6

In a large wok or big pan, heat about 3 tablespoons of olive oil over medium-high heat.

7

Add sweet onions and sauté until fragrant, then add minced garlic and scallions; stir to combine.

8

Add in the remaining veggies: red peppers, leeks, and carrots; cook until tender but still crisp.

9

Push the veggies to one side of the wok and crack in a couple of eggs; scramble them lightly in the pan.

10

Once the eggs are cooked, mix them with the veggies and add in the lump crab meat, heating it through with garlic and lime juice.

11

Add the cooked rice to the wok along with a sauce made from fish sauce, soy sauce, and a little sugar; mix everything together.

12

Monitor the color of the rice as it darkens slightly; be careful not to add too much soy sauce or fish sauce due to sodium content.

13

For the garlic buttery sauce, melt butter and oil in a separate pan over medium heat, then add minced garlic and cook until fragrant.

14

Pour in a cup of dry white wine and let it cook down slightly; this step is optional, and you can adjust with more butter if needed.

15

Drizzle the garlic buttery sauce over the crab and place it in the oven at 250 degrees for about 10 minutes to meld the flavors.
