Take 1.5 teaspoons of sesame oil and mix it into the day old rice to remove clumps and add flavor.
Heat about 1 teaspoon of olive oil in a pan, add eggs, and scramble them to desired doneness, adding a pinch of salt.
Transfer the scrambled eggs to a plate and set aside.
Add more sesame oil to the pan, then add the white part of the scallions and sauté until fragrant.
Add about half a tablespoon of minced garlic and sauté until fragrant.
Add crab meat to the pan and cook for about 30 seconds, then add half of the soy sauce and fish sauce, cooking for another 30 seconds.
Transfer the crab mixture to the plate with the eggs and set aside.
Add another teaspoon of sesame oil to the pan, then add the remaining minced garlic and sauté for about 30 seconds.
Increase heat to medium-high, add sugar, and then add the rice, mixing it in and cooking for about a minute.
Add the remaining soy sauce and Creole seasoning, mixing well and cooking for another 1-2 minutes.
Add the crab meat back into the pan and mix until evenly distributed throughout the rice.
Add the scrambled eggs back into the pan, breaking them up and mixing them into the rice and crab mixture.
Fold in the green onions until fully incorporated and then turn off the heat.
