5g of kaffir lime leaves
1 tsp of fish sauce
1/2 tsp of salt
1 tbsp of roasted ground chilli
2 tbsp of roasted ground rice
80g of shallots

Heat the pan and add all the minced pork.

Add salt, fish sauce, and kaffir lime leaves to the pork.

Transfer the pork to a larger heat-resistant mixing bowl and let it cool.

Cut shallots into thin slices and set aside.

Add basil leaves, mint leaves, and cilantro leaves to the bowl and set aside.

Squeeze lime to get about 2 tbsp of lime juice, rolling it on the board before cutting.

Remove all of the kaffir lime leaves from the pork mixture.

Add shallots, basil leaves, mint leaves, spring onions, roasted ground rice, roasted ground chilli, and lime juice to the pork and mix until well combined.
