1

Soak 1 pound of black beans overnight in cool water, then wash and drain them.

2

Rinse the salted pigtail several times, wash it with lime, soak it, and boil it in hot water, discarding the water afterward.

3

Wash 2 pounds of pork ribs with lime juice and water.

4

Cut 3 slices of bacon into chunks and sauté them to render out some fat.

5

Crush 6 cloves of garlic lightly and mix them with 1.5 teaspoons of chicken bouillon.

6

In an air fryer, rub some oil on the pork ribs and cook at 400°F for 20 minutes, turning them after 6 or 7 minutes for even browning.

7

Add the smoked sausage to the pan with the bacon and get some color on it.

8

Blend the sautéed onion and garlic from the ribs, then sauté them in the pan.

9

Combine all meats (except sausage and bacon) with the soaked beans in an instant pot, adding a couple of bay leaves.

10

Cover the mixture with hot water, almost to the top, and set the instant pot to cook for 35 minutes.

11

After cooking, pour the contents into a pot, add the smoked sausage and bacon, and let it simmer for 15-20 minutes to combine flavors.
