Moroccan Kefta Tajine with Eggs

Traditionally made for family gatherings, it combines spiced ground meat with eggs, symbolizing nourishment and hospitality. Today, it has found fans worldwide, often adapted with various spices and ingredients to suit local tastes.

Crush the San Marzano tomatoes with clean hands.
Heat olive oil in a tajine or heavy bottom pot over medium heat.
Add chopped onions, red peppers, and green peppers; sauté until softened, about 3-4 minutes.
Add pressed garlic and sauté for 30 seconds.
Add crushed tomatoes, ground cumin, ground coriander, sea salt, black pepper, and red pepper flakes; stir to combine and bring to a simmer.
Cover and reduce heat to medium-low; simmer for 25-30 minutes, stirring occasionally.
In a mixing bowl, combine ground beef, ground lamb, white onions, pressed garlic, chopped cilantro, chopped parsley, and chopped mint.
Season with ground cumin, mild paprika, hot paprika, ground turmeric, ground cinnamon, sea salt, and black pepper; mix well by hand.
Form small meatballs about the size of a ping pong ball and place on a plate.
Taste the sauce and adjust seasoning if necessary before adding meatballs.
Add meatballs to the sauce, cover, and cook for 5 minutes.
Gently rotate meatballs, increase heat to medium, cover, and cook for another 10 minutes.
Place 4 eggs on top of the meatballs, cover, and cook for 5 minutes.
Sprinkle with cilantro and parsley before serving with pita bread.
