Peel and wash two large cassava pieces, cut into small pieces, wash again to remove starch, and dry in the sun for about one to two weeks until very dry.
Grind the dried cassava until fine to make cassava flour.
Transfer 1 and 1/2 cups of cassava flour to a mixing bowl.
Add sugar, bicarbonate of soda, and salt to the cassava flour and stir to combine.
In a separate bowl, add the egg, cooking oil, and vanilla flavoring, and stir together.
Gradually add the dry ingredients to the wet ingredients, stirring with a wooden spoon.
Once the dough becomes heavy, mix with your hands until everything is combined, adding drops of milk until the dough is malleable.
Grease two pans and dust them with cassava flour.
Divide the dough into two parts, then each part into eight equal pieces, rolling each into a round ball.
Arrange the cookie balls in the pans and flatten them with fingers or a fork for decoration.
Transfer the pans to a gas stove, heating on full flame for 20-30 seconds, then reduce to the lowest flame.
Bake the cookies for about 20 minutes, then turn them over and bake for an additional 10 minutes to brown the surface.
