1

Preheat the oven to 450°F.

2

Prepare a large baking sheet with a piece of aluminum foil hanging off the edges and place a large piece of parchment paper on top.

3

Lay the salmon on the parchment paper, skin side down.

4

Brush the salmon with 2 tablespoons of olive oil, then sprinkle with 1/2 teaspoon of salt and 1/4 teaspoon of black pepper.

5

Place the salmon in the preheated oven and bake until it reaches an internal temperature of 145°F, about 15 minutes.

6

Once cooked, remove the salmon from the oven and let it rest for at least 15 minutes, loosely covered with foil.

7

While the salmon is resting, prepare the sour cream sauce by mixing together 1 cup of sour cream, 2 tablespoons of chopped fresh dill, 2 minced cloves of garlic, and 1/2 teaspoon of salt.

8

Prepare the topping by chopping up the drained roasted red peppers and mixing them with chives and parsley.

9

After the salmon has rested, spread the sour cream sauce over the top and then pile the roasted red pepper mixture on top.

10

Garnish around the salmon with salad leaves and additional tomatoes.
