1 onion, diced
1 garlic clove, minced
1 teaspoon ground ginger
2 cups baby spinach
2 ½ cups tomato sauce
1 teaspoon curry powder
1 teaspoon ground cumin
Salt and pepper to taste
20 oz. drained chickpeas (around 3 cups)
½ cup coconut milk
1 cup cooked basmati rice

In a nonstick frying pan over medium heat warm the olive oil and cook the diced onion and minced garlic.

Stir in the baby spinach and cook for another 2 minutes until it wilts down.

Stir in the ground ginger, tomato sauce, curry powder, ground cumin, salt, and pepper to taste and cook for about 5 minutes on medium to low heat.

Stir in the drained chickpeas and cook for 2 more minutes.

Finally, stir in the coconut milk or vegan cream and cook for additional 2 minutes.
