Wash and clean beef neck bones using vinegar, lime juice, and cool water.
Cut corn into wheels.
Add beef neck bones to a pot of water and season with ginger garlic and pimento seasoning, fresh blend seasoning, and stir.
Cover the pot and cook the beef for about 45 minutes to 1 hour.
Add pumpkin to the pot to cook with the beef.
Check the meat after 30 minutes; it should be starting to fall apart but not fully cooked.
After 1 hour, add the carrots to the pot and cook for 10 minutes.
Add more water to the pot to cover the ingredients.
Add potatoes, sweet potatoes, corn, pumpkin soup mix, chicken bouillon, all-purpose seasoning, salt, thyme, and Scotch bonnet pepper to the pot.
Stir the ingredients together and cover the pot, allowing it to simmer for about 20 minutes.
To make dumplings, combine 2.5 cups of flour with water gradually until a tight dough forms, knead until not sticky.
Roll the dough into desired shapes for dumplings.
After 20 minutes of simmering, add the dumplings to the soup and continue cooking until the vegetables are tender and the dumplings are cooked.
