Measure and prepare all the ingredients first to be organized.
Grease a 8x4x4 inch loaf pan (set aside).
Preheat the oven at 325 degrees Fahrenheit ten minutes before baking.
Add the shredded coconut and both milk in a blender and blend to a smooth consistency, set aside.
Add the sugar and butter in a bowl and mix until semi smooth consistency forms.
Add the egg and the remaining ingredients starting with coconut mixture, then the dry ingredients. Mix until well incorporated.
Add the mixture in the prepared loaf pan, spread evenly.
Place the pan on the middle rack and bake for 35 minutes or until golden and when inserting a toothpick it comes out clean.
Let it cool in the pan for ten minutes, then transfer to a cooling rack.
