Add 2 cups of flour to a mixing bowl.
Add 1 cup of granulated sugar to the flour.
Mix the flour and sugar together briefly.
Add 2 teaspoons of baking powder, 1 teaspoon of cinnamon, 1 teaspoon of nutmeg, and a dash of salt to the bowl and mix again.
Add 1 to 1.5 cups of grated dried coconut to the mixture and combine.
Add 2 sticks of room temperature butter to the dry ingredients and mix until it resembles breadcrumbs.
Add 1 cup of mixed fruit and 1 cup of dried cranberries (or raisins) to the mixture, reserving some fruit for topping later, and mix gently.
In a separate bowl, combine 1 egg and 1/4 cup of coconut milk and mix by hand.
Fold the egg and milk mixture into the batter gently.
Grease a loaf pan with oil or butter.
Pour the batter into the greased loaf pan and smooth the top.
Add the reserved fruit on top of the batter.
Preheat the oven to 325°F.
Bake the bread for about 1 hour, checking with a skewer or knife to ensure it comes out clean.
Remove the bread from the oven and let it cool slightly before serving.
