Wash the pork belly clean and drip dry. Slice into ~ 1 inch pieces. Marinate with 3 tbsp light soy sauce and 1 1/2 tbsp Chinese wine for 30 minutes.

Use a large base pan to render the meat without oil. Spread the meat evenly and let it cook for ~10 minutes until it starts to brown and crisp.

Remove excess oil, then add minced garlic, star anise, cloves, and bay leaf. Sauté until fragrant.

Add brown sugar, five spice powder, light soy sauce, and dark soy sauce. Sauté until well mixed and the meat is coated.

Add water, fried shallots, and quail eggs. Bring to medium high heat and braise for ~40 minutes until saucy.

Add chopped spring onions and turn off heat. Serve hot on freshly cooked rice.
