Add cassava flour to a bowl.
Add salt and a shake of cayenne pepper.
Cube and add butter to the bowl.
Grate and add cheddar cheese to the bowl.
Rub the butter, cheese, and cassava flour together using fingertips until it resembles coarse crumbs.
Drizzle in cold milk and continue to rub until the mixture holds together without crumbling apart.
Heat a small nonstick pan over medium-high heat.
Add about 1/2 cup of the mixture to the pan, spreading it into an even layer about a quarter to half inch thick.
Press the edges with a spatula to compact any loose crumbles.
Cover and cook for about 3-4 minutes until the bottom is golden brown.
Flip the flatbread using a spatula and cook the other side for another 3-4 minutes until browned.
Transfer to a plate and serve warm.
Optionally, top with chipotle mayo, sliced avocado, fire roasted red pepper, and green onion, finishing with a sprinkle of coarse salt.
