Letri, also known as Litti, hails from the state of Bihar in India. Traditionally, it was a staple for farmers and laborers, providing sustenance during long days of work. The dish features a unique combination of whole wheat dough stuffed with spiced sattu, reflecting the region's agricultural heritage. 1 egg yolk
4 slices small-sized bread
2 cups freshly grated coconut
1/2 cup assorted dry fruits and nuts (almonds, cashew nuts, raisins, red cherries)
1/2 teaspoon vanilla essence
1/2 teaspoon cardamom powder
1 tablespoon ghee or butter
1 pinch salt

Prepare the egg threads by separating the yolk from the egg white and lightly beating the yolk.

Strain the yolk through a fine strainer twice to ensure smoothness.

Transfer the strained yolk into a piping bag and make a tiny cut at the tip.

Heat a heavy bottom pan on low flame and add 1 cup of sugar and 1/2 cup of water to make a light clear syrup.

Once the syrup is boiling, drizzle the yolk in a thin circular motion to form egg threads, cooking for 1 to 2 minutes until golden yellow.

Lift the cooked egg threads gently and transfer them onto a plate to cool.

In the same syrup, add 2 cups of freshly grated coconut and 1 cup of small bread pieces, stirring well.

Cook on a slow flame for around 5 minutes, stirring constantly to prevent burning.

Add 1/2 teaspoon of vanilla essence, 1 pinch of salt, and 1/2 cup of chopped assorted dry fruits and nuts.

Mix in 1 tablespoon of ghee or butter and 1/2 teaspoon of cardamom powder, stirring until the mixture thickens and leaves the sides of the pan.

Transfer the mixture onto a greased plate or tray, shaping it as desired and smoothing the top.

Decorate with the egg threads and cherries, then let it cool completely before cutting into pieces.
