Dice 2 middle apples into small cubes.
Spread diced apples on the bottom of a baking dish in one layer.
Sprinkle the apples with 1 tsp cinnamon.
Add 1 Tbsp sweetener and toss lightly to coat.
Chop ¼ cup walnuts into fine crumbs and place in a bowl.
Add 1 cup almond flour, 1 tsp cinnamon, and 2 Tbsp sweetener to the bowl and whisk together.
Add ½ stick softened butter and rub in with fingers until a crumbly texture forms.
Scatter the crumble evenly over the apple layer.
Bake for 30 minutes at 190°C (374°F).
Let it cool slightly so the juices thicken.
Spoon onto plates and serve with a scoop of sugar-free ice cream or a dollop of mascarpone.
Crack 4 eggs into a bowl and add ⅓ cup sweetener.
Add 1 stick melted butter and whisk until smooth.
Add 2½ cups almond flour and ½ Tbsp baking powder and mix thoroughly until the texture is like very thick sour cream.
Dice 1 large apple into small pieces.
Prepare a cake/bread mold (silicone).
Spread half of the batter over the bottom of the mold.
Add the diced apple as the middle layer and cover with the rest of the batter.
Bake for 40 minutes at 185°C (356°F).
For the topping, mix together ½ cup cream cheese, ½ cup Greek yogurt, and 2 Tbsp sweetener.
Spread the cream on top of the cooled pie and decorate with 2 Tbsp almond flakes.
