Almond flour is gluten-free and adds a nutty flavor.
In a medium-sized bowl, add 1 cup of all-purpose flour, 1/4 cup of sugar, 1/4 cup of brown sugar, 1/2 teaspoon of cinnamon, and 1/4 teaspoon of salt. Stir all the ingredients together.
Add 1 stick of softened unsalted butter to the mixture. Use a pastry cutter to cut the butter into the flour until it reaches a crumbly texture.
Add 1 teaspoon of vanilla extract, 1/2 cup of Quaker oats, and 1/2 cup of chopped pecans. Stir all the ingredients together. Cover and refrigerate until ready to use.
In a large bowl, add 8 to 10 cups of water and squeeze the juice of 1 medium lemon into it to create lemon water.
Peel 4 lbs of Granny Smith apples using a fruit peeler. Core the apples and cut them into thick slices.
Soak the apple slices in the lemon water for 5 minutes, then drain them using a strainer.
In a large bowl, combine 2/3 cup of sugar, 2/3 cup of brown sugar, 3 tablespoons of cornstarch, 1 teaspoon of cinnamon, 1/2 teaspoon of allspice, and 1/4 teaspoon of salt. Stir well.
Add the drained apple slices to the sugar mixture and stir for 5 minutes until the apples release their juices.
In a large pot over medium heat, melt 2 tablespoons of cubed unsalted butter and add 1 teaspoon of vanilla extract. Stir and let it simmer for 1 to 2 minutes until thickened.
Add the apple slices to the pot and stir to coat them well. Let the mixture cool for 5 minutes.
Preheat the oven to 375°F (190°C).
Add the apple filling to a 9x13 inch baking pan and spread it evenly. Sprinkle the crumb topping over the apples and press it down gently.
Bake in the preheated oven for 30 minutes. Let it cool for 2 hours before serving.
