Pakistani Cold Dessert

Cultural Context

Originating from the rich culinary traditions of the Indian subcontinent, this cold dessert is a beloved treat in Pakistan, particularly during hot summer months. Kulfi, a traditional form of ice cream, is often flavored with cardamom, saffron, and nuts, symbolizing celebrations and family gatherings. Today, variations like Falooda, which combines kulfi with noodles and syrup, have gained popularity, making this dessert a staple at festive occasions and street food stalls across the region.

1

Add 1 liter of milk to a pan.

2

Add about 1/2 cup sugar and mix well.

3

In a separate bowl, mix 2 tablespoons of custard powder with a little milk until smooth.

4

Once the milk boils, add the custard mixture and whisk continuously to avoid lumps.

5

Cook for 3-4 minutes until the custard is ready and smooth, then let it cool.

6

In another pan, add about 1 glass of water and bring to a boil, then add 3-4 tablespoons of sugar and yellow food color to make a syrup.

7

Remove the crusts from 6 slices of bread and set aside the crusts for later use.

8

Beat 1/2 cup of cream until fluffy, then mix in the cooled custard.

9

Grind the bread crusts into crumbs and mix them into the custard and cream mixture.

10

In a serving dish, layer 2 slices of bread, drizzle with syrup, and then add the custard mixture on top.

11
