Named after Lord Lamington, the governor of Queensland, these delightful squares of sponge cake are dipped in chocolate and rolled in coconut, often served at afternoon tea. They reflect the Australian spirit of creativity and resourcefulness, with variations including flavored coatings or fillings. Today, Lamingtons are enjoyed at celebrations and gatherings, embodying a sense of nostalgia and community.

Add 3 eggs into a mixing bowl and beat for about 8 minutes until creamy and fluffy.
Slowly add 75 grams of caster sugar and mix for about 2 minutes.
Add both 25 grams of self-raising flour and 35 grams of plain flour, mixing for about 1 minute.
Add 25 grams of corn flour and mix again.
Grease a small cake pan and line it with baking paper.
Pour the mixture into the pan and bake at 180°C for about 35 to 40 minutes.
Once baked, transfer the cake to a wire rack and let it cool for about 10 to 15 minutes.
Prepare the ganache by mixing 2 cups of icing sugar, 1/4 cup of cocoa powder, and 15 grams of melted butter in a bowl.
Add 1/2 cup of milk to the ganache mixture and mix well.
Place the ganache bowl over a simmering pot of water and mix until everything dissolves.
Cut the cooled cake into three parts, then into smaller pieces as desired.
Dip each piece of cake into the chocolate ganache, turning to coat.
Roll the dipped cake pieces in 1 cup of desiccated coconut until fully coated.
