1

Preheat the oven to 180 degrees Celsius.

2

Prick the potatoes and place them on a roasting tray.

3

Bake the potatoes in the oven for about 90 minutes.

4

While the potatoes are baking, place smoked streaky bacon on a grill pan and bake in the oven for about 10-12 minutes until golden and crispy.

5

Let the bacon cool, then chop it into lardons.

6

In a large saucepan, add a dash of oil and the diced bacon lardons until crispy.

7

Peel and finely dice an onion and some garlic, then add them to the pan with the bacon and sweat for 4-5 minutes.

8

Peel and chunk up the parsnips, then add them to the pan along with the chestnuts, cider, and chicken stock.

9

Bring the mixture to a boil and simmer for about 20-25 minutes until the parsnips are soft.

10

Once the potatoes are baked and cooled, chop them in half and spoon out the insides.

11

Mash the potato through a sieve until fine and fluffy.

12

In a bowl, mix the fluffy mashed potato with flour, egg, parmesan, a pinch of salt, and chopped thyme to form a dough.

13

On a heavily floured surface, take sections of the gnocchi dough and roll them into thin sausages.

14

Cut the sausages into pieces about 2 centimeters long and squash each piece with the back of a fork.

15

Bring a pot of salted water to a boil and cook the gnocchi for 2-3 minutes until they rise to the top.

16

Remove the gnocchi with a slotted spoon and serve immediately with the sauce and bacon.

17

For extra luxury, fry the gnocchi in a pan with butter before serving.

18

Finish the sauce with a splash of double cream and serve with bacon crumbles and fresh thyme.
