Adobo Marinated Chicken Wings

It reflects the country's rich history of Spanish influence, combining vinegar, soy sauce, and spices to create a savory, tangy flavor profile. Traditionally made with pork or chicken, adobo has many regional variations, and today, it has gained international popularity, with many adapting the recipe to suit local tastes.

Coconut sugar offers a lower glycemic index.
Remove the stems and seeds from the corgio and ancho chilies by cutting the tops off and opening them up.
Place the cleaned chilies in a pot with enough water to cover them and bring to a boil.
Once boiling, turn off the heat and cover the pot for about 30 minutes to let the chilies soften.
After 30 minutes, transfer the softened chilies to a blender.
Add one chopped whole white onion to the blender.
Add five whole garlic cloves to the blender.
Pour in a couple of tablespoons of soy sauce into the blender.
Add one tablespoon of black garlic powder to the blender.
Add about a tablespoon of Mexican oregano to the blender.
Include two cinnamon sticks in the blender.
Add about a tablespoon of ginger to the blender.
Add about a tablespoon of cloves to the blender.
Add about a teaspoon of thyme to the blender.
Add one tablespoon of chicken bouillon to the blender.
Pour in a couple of tablespoons of olive oil into the blender.
Squeeze the juice of two small limes into the blender.
Add one tablespoon of kosher salt to the blender.
Add one tablespoon of black pepper to the blender.
Add half a cup of water to the blender.
Blend all the ingredients until smooth, adjusting salt to taste if necessary.
Taste the marinade and add cayenne pepper to taste, about a teaspoon for mild heat.
Blend again until the marinade is smooth.
Take the chicken wings and place them in a bowl.
Pour the blended marinade over the chicken wings, ensuring they are well coated.
Add a bay leaf to the marinade with the chicken wings.
Cover and refrigerate the wings for at least 1 hour, preferably overnight.
