Oxtail stew is a beloved dish in Jamaica, often served at family gatherings and special occasions. This hearty meal reflects the island's rich culinary heritage, combining the flavors of local spices and ingredients. Traditionally slow-cooked, the dish allows the oxtail to become tender and infused with the aromatic seasonings, making it a comforting staple in Jamaican households.

Heat 2 tbsp vegetable oil in a large pot over medium-high heat.
Brown 2 lbs of oxtail for about 6-7 minutes, then remove from the pot.
Add onions, 2 cloves of garlic, scallions, and celery to the pot; sweat down for about 4 minutes on low heat.
Add fresh ground black pepper and 3-4 allspice berries, then toast for a moment.
Add 2 tbsp of tomato paste and toast it in the pot to release sugars.
Return the browned oxtail to the pot along with any juices.
Add enough water to cover the oxtail, then add 1 scotch bonnet pepper and soy sauce.
Bring to a boil, then reduce heat to low and cover, letting it simmer for at least 2 hours.
After 2 hours, add 3 chopped potatoes and 1 chopped carrot to the pot; cook for another 40-45 minutes.
Check for tenderness of the oxtail and adjust salt as needed after 30 minutes.
If needed, add about 1 cup more water during the braising process to keep the meat submerged.
Taste for salt and add 1/4 to 1/2 tsp of brown sugar for flavor enhancement before serving.
Finish with chopped parsley for garnish.
