Thai Style Spare Ribs

Originating from the vibrant street food culture of Thailand, Thai Style Spare Ribs are a beloved dish that showcases the balance of sweet, salty, and spicy flavors typical in Thai cuisine. These ribs are often enjoyed during festive occasions and family gatherings, where sharing good food is central to the experience. Today, they are popular not only in Thailand but also in Thai restaurants around the world, often served with rice or as part of a larger feast.

Olive oil is healthier and can be used for sautéing.
Mix 7.5 tablespoons of garlic paste, 3 tablespoons of soy sauce, 3 tablespoons of fish sauce, 1 tablespoon of black pepper, 1 tablespoon of salt, and 2 tablespoons of brown sugar in a bowl.
Add 8 cilantro stems and leaves and 2 chopped green onions to the marinade and mix well.
Lightly coat the pork spare ribs with Sofa King Awesome Barbecue Thai Dragon powder.
Put the ribs in a 2-gallon Ziploc bag and pour the marinade over them, ensuring they are well coated.
Seal the bag and let the ribs marinate in the refrigerator for at least 2 hours, flipping occasionally.
Preheat the smoker to 275°F.
Place the marinated ribs on the smoker and cook for 3 hours without wrapping them.
Check the ribs after 3 hours for color and caramelization, then continue cooking until they reach an internal temperature of 200-203°F, which may take an additional 1-2 hours.
Once cooked, remove the ribs from the smoker and let them rest for 30 minutes before serving.
Brush the ribs with a sauce made from fish sauce, lime juice, chili flakes, green onion, and hot honey before serving.
